A 12-week University of Toronto study found that three daily servings of full-fat dairy did not increase weight, body fat, cholesterol, or insulin resistance, while improving blood pressure and nutrient intake in adults.
Study Finds No Major Health Trade-Offs
The study, led by Harvey Anderson, a professor of nutritional sciences at the University of Toronto’s Temerty Faculty of Medicine, included 74 adults with overweight or obesity. Participants followed one of three dietary plans, including diets with three daily servings of full-fat dairy.
After 12 weeks, researchers found no meaningful differences in weight gain, body composition, or cholesterol levels between participants who consumed three servings of dairy and those who followed a low-dairy diet. Participants consuming more dairy also had improved blood pressure and higher intakes of calcium, protein, and vitamin D.
The findings challenge the assumption that the saturated fat in full-fat dairy necessarily produces harmful health effects. Dietary guidance has traditionally favored low-fat or fat-free dairy because saturated fat can raise cholesterol and is associated with cardiovascular risk.
Anderson said human research has not consistently supported those concerns for dairy foods.
“Those that had three servings of dairy didn’t have adverse levels of blood cholesterol or lipids or evidence of insulin resistance,” Anderson said.
Researchers Point To The Dairy Matrix
Researchers say the results may be explained by the “dairy matrix” hypothesis, which considers how a food’s nutrients interact rather than examining one nutrient in isolation.
“With dairy products, it’s got two proteins — casein and whey — that are bound together with fat and with nutrients mixed in,” Anderson said. He said the structure may allow nutrients to be delivered more gradually during digestion.
Casein makes up most of the protein in cow’s milk, while whey provides a rich source of amino acids, including leucine. Together, the proteins provide all nine essential amino acids.
The researchers said the findings add to a growing body of human research reporting neutral or potentially beneficial associations between dairy consumption and health outcomes. Recent research led by Kozeta Miliku, an assistant professor of nutritional sciences at the University of Toronto, has also reported potentially protective effects associated with dairy intake.
Researchers Urge A Balanced Diet
The study does not establish that full-fat dairy is universally healthier than low-fat dairy, nor does it eliminate the need to consider an individual’s overall diet and health needs. The trial lasted 12 weeks and focused on adults with overweight or obesity.
The research instead supports a broader approach to nutrition that considers whole foods and dietary patterns rather than judging foods solely by individual nutrients.
Anderson said the findings may be particularly relevant for older adults who need nutrient-dense foods while managing lower energy needs. Dairy can provide protein, calcium and vitamin D in a familiar food source.
As nutrition advice continues to evolve, Anderson offered a straightforward recommendation: “Keep it simple, eat a variety of foods and not too much of anything.”
